I opened a bottle with 4cm ullage, 17 October 2003: Deep gold, healthy colour, fairly thick legs, and fairly viscous in the glass. Complex aromas of candied apples, wet wool, honey and spice, mineral-edged. Classic chenin. On the palate, quite sweet on the attack, sound, rich, and fairly long. Apple, citrus, very waxy botrytis, a touch of mineral earthiness on the finish.
Second tasting of a 1.5 cms ullage bottle with Chinese food, 18/11/03 - delicious, fresh and a good match for the combination of spicy and wok-caramelised meat dishes.
Third bottle at our 'Loire Valley Sweet Classics' tasting, 27th January 2004: Light yellow gold, bright; waxy aroma with some volatile acidity, pineapple fruit; rich on the palate though losing a little sweetness. A tad 4-square in the line up, but quite nice.
4th and 5th bottles (both 1.5cms ullage) at dinners in September and October 2004 - both absolutely delicious. Quite decadent and pineapple-like, and with a long finish.
6th bottle in Novemver 2004 - 5cms ullage and some signs of seepage: fairly oxidised - not that enjoyable to drink.
