At The Fine Wine Experience we adore both Champagne and Caviar, how about you? At our Meet the Growers Tasting as part of our Fine Wine Experience Burghound Symposium 2023 programme last month, lots of our wine-loving friends were interested in the Kaviari Paris caviar table, so we decided to bring them back for something focused, something both fun and educational.

This afternoon’s tasting focuses on understanding different types of Champagne, different types of caviar, and on how they work together. The Champagne selection serves as a discovery of six smaller producers. The selection though also covers a wide range of Champagne styles, single varietal examples and blends, Champagne sub-regions, and winemaking approaches. We will taste and learn about three types of caviar from Paul Janson from French house Kaviari Paris. We will learn about and experience for ourselves how to match caviar and Champagne. Fun of course, but this is also useful knowledge special occasions at home and for hosting guests.

Caviars we will taste
The Baeri Royal: the "Siberian" Caviar, with small roes and a dark colour. Marine flavours are powerful with earthy notes and a fruity finish. It was the favourite of Chef Joel Robuchon. To be paired with a Champagne that'll bring freshness and balance this iodich Caviar.

The Oscietre Prestige: one of the most famous Caviar names, with a beautiful amber colour, bigger roes and subtle aromas of the sea. It's long lasting hazelnut finish makes it perfect for a tasting "A La Royale" - to taste the Caviar by itself, or with a glass of brut Champagne.

The Kristal® Signature: a unique creation by Kaviari. This hybrid Caviar gathers the most important features for Chefs : large golden roes with delicate iodic flavours and an almond finish. It makes it the most interesting Caviar for pairings as its complex flavours will be highlighted a different way depending on the ingredient it is paired with. From savoury to sweet, it is time to be bold and taste unexpected pairings!
